Since we have been cooking so much more this summer, we have discovered alot of new recipes. Two of our new favorites involve these fun ingredients: brown sugar and oatmeal. So yummy that I thought I'd share the recipes...
Brown Sugar & Oatmeal Pancakes
1/2 cup plus 2 tbsp quick-cooking oats
1 cup all-purpose flour
1/2 tsp baking soda
1/2 tsp salt
1/3 cup packed brown sugar
1 egg
2 tbsp vegetable oil
1 cup buttermilk
In a bowl, combine the dry ingredients. In another bowl beat the oil, egg & buttermilk. Stir into dry ingredients until moist. Pour batter onto greased hot griddle. Turn when bubbles form on top & cook until second side is golden brown. Serve hot. Yeilds about 10 pancakes...so I triple this recipe.
(note: did you know that you could add 1 tbsp vinegar in a measuring cup and then add enough regular milk to fill to 1 cup mark, let stand for 5 minutes, to substitute for buttermilk? Works like a charm.)
Baked Oatmeal
(recipe from my sweet friend PeriDawn)
2 eggs
3 cups oatmeal
2 tsp baking powder
1 cup brown sugar
1 cup milk
1/2 tsp salt
1 stick butter
dried cranberries and pecans (as much as your heart desires)
Preheat oven to 350. Melt butter in a 9 x 13 glass pan.
Mix other ingredients together. When melted, pour in oatmeal mix.
Bake for 30 minutes. Serve warm.
(healthy confession: since one member of our family cannot have brown sugar, I have substituted maple syrup in both of these recipes. Still good, not as good...but good enough if you need to.)
