So, all of those broilers we raised had a pretty big leap from pasture to dinner table, but even that is a family affair. While Brent helped butcher every Weds, either Abigail, Samuel or both of them would help too. They worked from about 8:30-1:30.
The butchering is done on an outdoor pad with multiple stations set up in an assembly line. With everyone helping and all equipment running well, they can process 200 chickens/hour. Remember: one of those team members is 6 years old! Family friendly farming indeed.
Samuel is helping with one of the final steps: a small cut and tucking the legs inside. During the summer he helped with killing, bagging, quality control, and his favorite: catching the chickens that manage to escape the holding crates.
This is Abigail's first try at the gutting station. During the summer she also helped with killing, bagging, transfering to iced cooling tanks, and quality control. She loved getting to visit with all the people she worked with.
